Free-range farming requires more land, more time, and a higher quality of life for the animals, which directly translates to better meat. We see it as an investment. You invest in the animal’s welfare, and you get back flavour and quality that industrial farming simply cannot replicate. It’s why we age our beef for at least 30 days; it breaks down connective tissue and concentrates flavour. Some butcher shops are starting to offer a similar service, but often skip the aging period.
