We’re not just butchers; we’re custodians of flavour. For years, we’ve been bringing the best of Irish farming to kitchens across Galway and beyond. You’ve got a vision for your meal – a roast that’ll have the neighbours talking, sausages that sing on the BBQ, or a steak that melts in the mouth. We’re here to make that happen, cutting no corners on quality. Our approach is simple: source the finest, prepare it with respect, and get it to you fresh, whether you’re popping in from Salthill or ordering for a dinner party near Eyre Square.

Beef and lamb, ‘grass-fed’ isn’t just a buzzword for us; it’s the foundation. Our animals graze freely on pastures across Ireland, building deep flavour and tenderness. You can see it in the marbling, the rich colour. We work with small farms, the kind where you know the farmer by name. This isn’t factory farming.
It’s about respecting the animal and the land. We’ve tried quick-finish methods, and frankly, they just don’t give you that authentic taste. For a truly superior experience, consider looking into what makes a premium free-range butcher stand out.Our dry-aging process, for instance, is a labour of love. We aim for a sweet spot, typically between 30 and 85 days, depending on the cut and the beast. Shorter if it’s destined for mince, longer for a show-stopping ribeye. It’s a balance. Too short, and you miss the enzymatic breakdown that tenderises and concentrates flavour. Too long, and you risk off-notes, a nutty taste that some folks enjoy but isn’t our signature. We’ve had to scrap entire batches once or twice. Costly? Absolutely. Worth it? Every time.

The rule of thumb for pork belly? Treat it like a brisket. Low and slow wins.
Our pork comes from heritage breeds, typically Gloucester Old Spots or similar. They’re slower growing, meaning more intramuscular fat, which translates to incredible succulence. You won’t find pork this flavourful in most supermarkets. Forget that pale, watery stuff. Our pork has a rich, nutty taste and a texture that stands up to slow cooking or a proper pan-sear. We butcher whole sides, so you get a full spectrum of cuts – from delicate loin to glorious belly and ears for crackling.
Chicken is another one that gets a bad rap. Most of what’s available is bred for speed, not flavour. Our birds are slower growing, with more time to develop muscles and flavour. You’ll notice the difference straight away – firmer texture, a richer, more taste. We often get asked about brining; for a standard roast chicken, I find it’s often unnecessary if you’ve started with quality. A good seasoning, maybe some herbs stuffed under the skin, and attention to cooking temperature is key. We’ve seen people go to elaborate lengths, and honestly, it can muddy the natural taste of a good bird. Don’t overcomplicate it.
| Cut | Fat Content | Ideal Cook |
|---|---|---|
| Pork Belly | High | Slow Roast / Braise |
| Chicken Thighs | Medium | Grill / Pan-Fry |

Sausages. It’s where we really let our hair down. We make them in small batches, often based on traditional recipes, but with our own twist. The casings need to be right – natural hog or lamb, plump and strong. The mince texture matters; too fine, and it’s mush. Too coarse, and it falls apart. We aim for a good bite. And the seasoning? That’s the art. We’ve spent years refining our blends. Some customers swear by our traditional pork, others demand the spicy merguez. We cater for all tastes, and we’re always trying new things. If you’re looking for something specific, just ask. We’ve even done a few custom batches for local restaurants in the Latin Quarter.
Don’t let anyone tell you that cheap sausage is good value. It never is.
Charcuterie is a different beast entirely. Curing, smoking, fermenting – it’s a science and an art. We’re particularly proud of our pancetta and speck, cured and aged for months. It takes patience. It takes a controlled environment – temperature, humidity, air flow. We have a dedicated curing room. It’s not something you can whip up overnight. And traceability on these is just as important; we know the origin of every pig and cow that goes into our cured products. It’s part of the promise we make. We recently updated our approach to sourcing game, which you can read about in a similar build over in Limerick.

Absolutely. If you have a particular cut in mind, especially for events or special occasions, give us a call. We can often accommodate custom requests from our whole-animal sourcing.
We use express refrigerated shipping. Your order is packed in insulated boxes with gel packs to maintain a strict cold chain from our shop to your door.
Yes, all our beef and lamb is exclusively grass-fed. This is non-negotiable for us and for the flavour and quality you expect.
While our focus is on exceptional meat, we do carry a curated selection of artisanal accompaniments like sauces, rubs, and cheeses that pair perfectly with our products.
For most of our sausages, a medium-heat pan or grill is ideal. Avoid high heat which can burn the outside before the inside is cooked through. A gentle fry or roast is usually best.
Fresh meats can be frozen, though we recommend consuming them fresh for the best experience. If freezing, wrap tightly to prevent freezer burn. Sausages and charcuterie generally freeze well.
